Bruised Bananas
Since the accident I need to turn my focus onto something that doesn't require too much physical work. Cooking it is. And then I came across this blog Not Quite Nigella, specifically this post about a Banana Bread Bake Off and thought what the heck.
Everyone knows that a good banana bread requires over ripe bananas. I hate bruised fruit, especially bananas with their black icky skin, I don't even eat the ends on perfect bananas - yuk! You see my dilemma here?? Lucky for me when I woke up yesterday the husband (still not used to saying that) had left a suprise for me in the fridge so I didn't have to deal with the ickness....awwwwwww!

For a non cook I think it turned out pretty well!

- 200g dried figs, chopped
- 2 eggs, lightly beaten
- ½ cup brown sugar
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 2½ cups wholemeal self-raising flour
- 1 cup soy milk
- 3 ripe medium bananas, mashed
For a non cook I think it turned out pretty well!
